Jennifer C. Lai, MD, MBA, FAASLD is a Professor of Medicine and the Endowed Professor of Liver Health & Transplantation at the University of California, San Francisco (UCSF). Triple-board certified in Transplant Hepatology, Physician Nutrition, and Integrative Health, she is a nationally recognized integrative hepatologist specializing in the care of patients with chronic liver disease and liver transplantation. Dr. Lai leads an NIH-funded research program focused on frailty, sarcopenia, nutrition, and outcomes in patients with cirrhosis and liver transplantation. She also serves as Director of UCSF Health Advancing Research in Clinical Hepatology (ARCH) and Director of the Patient-Facing Research Core of the UCSF Liver Center. Her work has been widely supported by the NIH, AASLD, AGA, AST, and other leading organizations, and she currently serves as an Associate Editor of Hepatology and a member of the AASLD Foundation Board of Trustees.
Nutrition remains the cornerstone of MASLD management. This practical session will provide evidence-based dietary strategies that clinicians can implement immediately to improve liver health, metabolic outcomes, and patient engagement.
Metabolic dysfunction-associated steatotic liver disease (MASLD) is now the most common chronic liver disease worldwide and is closely linked to obesity, insulin resistance, type 2 diabetes, and cardiovascular disease. While lifestyle modification remains the foundation of treatment, translating nutritional recommendations into sustainable clinical practice remains challenging for both providers and patients. In this session, Prof. Jennifer Lai will present a pragmatic, evidence-based approach to nutrition management in MASLD, focusing on realistic dietary interventions that can be integrated into routine clinical care. Participants will learn how dietary quality, calorie balance, protein intake, meal composition, and weight-loss strategies influence liver steatosis, inflammation, fibrosis progression, and overall metabolic health. The session will also explore emerging evidence on nutrition in patients with advanced liver disease and discuss practical counseling techniques that improve adherence and long-term outcomes. Drawing from her expertise in hepatology, physician nutrition, and integrative health, Dr. Lai will provide actionable tools for individualized patient care across the spectrum of MASLD.
